Simon Rimmer burrata with butter poached tomatoes and hazelnut pesto recipe on Steph’s Packed Lunch

Simon Rimmer served up tasty burrata cheese with butter poached tomatoes and hazelnut pesto on Steph’s Packed Lunch.

The ingredients for the tomatoes are: 500g cherry tomatoes, skinned, 400g unsalted butter, 2 cloves garlic, peeled and sliced, 1 piece lemon peel, 4 sprigs thyme and 1tsp sea salt.

For the hazelnut pesto: 100g hazelnuts, well oven roasted, Bunch of fresh basil, 200ml olive oil, 2 cloves garlic, peeled and chopped, 1 lime, zested and 70g aged parmesan, grated.

To serve: 2 x 200g burrata, drained, Handful of hazelnuts, chopped and 1 x baguette, sliced.
