Simon Rimmer chicken jalfrezi with butter and lemon recipe on Steph’s Packed Lunch

Simon Rimmer served up a tasty chicken jalfrezi with butter and lemon on Steph’s Packed Lunch.

The ingredients are: 75g vegetable oil, 1 onion, peeled and finely chopped, 2 cloves garlic, peeled and sliced, 750g chicken breast, cut into big chunks, 1tsp chilli powder, 1tbsp turmeric, Large pinch salt, 440g tin chopped tomatoes, 1tbsp ground ginger, 1tbsp ground coriander, 1tbsp ground cumin, 30g unsalted butter, melted and 1 lemon, juiced.

To serve: 2 tbsp coriander, chopped, Steamed basmati rice, 2 naan bread, 1 red chilli, sliced and 1 lime, wedged.
