Simon and Dave’s lamb chop pakoras with fattoush salad recipe on The Hairy Bikers Go West

Simon King and Dave Myers served up a tasty lamb chop pakoras with fattoush salad, raita and chutney on The Hairy Bikers Go West.

The ingredients are: 1kg small lamb chops, 1 tsp cumin seeds, 1 tsp coriander seeds, 1 tsp black peppercorns, 500ml milk, 1 cinnamon stick, 5 cloves, 12 cardamom seeds, lightly bashed, 2 mild chillies, finely sliced, thumb-sized piece ginger, grated, 1 onion, finely chopped, 50g gram flour, 1 tsp black mustard seeds, 125g thick natural yoghurt, 1 tsp salt, ½ tsp cayenne pepper and groundnut oil, for deep frying.

For the fattoush: 2 pitta breads, 250g cherry tomatoes, halved, 1 large cucumber, diced, 2 large or 4 small Little Gem lettuces, shredded, 1 large green pepper, diced, 4 spring onions, sliced into rounds, 200g radishes, sliced into rounds, small bunch parsley, finely chopped and small bunch mint, finely chopped.

For the dressing: 1 lemon, juice only, 1 tbsp olive oil, 1 tsp sumac, plus extra to serve, pinch ground cinnamon, salt and freshly ground black pepper.

To serve: lime quarters and sea salt flakes and raita and chutneys.
