Si and Dave’s gingerbread and black cherry trifle recipe on The Hairy Bikers Go West

Simon King and Dave Myers served up a delicious gingerbread and black cherry trifle on The Hairy Bikers Go West.

The ingredients for the gingerbread are: 150g plain flour, 1 tbsp ground ginger, ½ tsp bicarbonate of soda, pinch salt, 100g golden syrup, 100g black treacle, 60g soft dark brown sugar, 75g butter, 125ml milk and 1 free-range egg, beaten.

For the honeycomb: butter, for greasing, 200g caster sugar, 5 tbsp golden syrup and 2 tsp bicarbonate of soda.

For the trifle: 250g pitted sweet cherries (fresh or frozen), 2 tbsp caster sugar, 3 tbsp sweet sherry, 2–3 tbsp black cherry jam, 100g amaretti biscuits, 500ml custard, 250ml double cream and 3–4 pieces stem ginger, very finely sliced.
