Si and Dave’s Egg Foo Yung with prawns and pork mince recipe on The Hairy Bikers Go West

Simon King and Dave Myers served up a tasty Egg Foo Yung (Chinese omelette) with prawns and pork mince on The Hairy Bikers Go West.

The ingredients for the omelette are: 2 tbsp vegetable or groundnut oil, 150g pork mince, 4 spring onions, finely chopped, 2 garlic cloves, finely chopped, 3cm piece fresh root ginger, finely chopped, 2 tbsp soy sauce, 1 tbsp mirin, ½ tsp toasted sesame oil, 150g raw prawns, roughly chopped, 100g fresh beansprouts, cut in half, 1 carrot, peeled and shredded, small bunch coriander, chopped, 6 free-range eggs, beaten, salt and freshly ground black pepper.

For the sauce (optional): 300ml chicken stock, 2 tbsp soy sauce, 2 tbsp oyster sauce, 2 garlic cloves, finely chopped, 3cm piece fresh root ginger, finely chopped, ½ tsp dried chilli flakes, ¼ tsp brown sugar and 1 tsp cornflour.
