Simon Rimmer served up vegan black bhaji with caramelised onions and mango raita on Sunday Brunch.
The ingredients are: 3 sliced caramelised onions, 3 cloves garlic, 2 finely chopped red chillies, 225 300g chopped vegan black pudding, Approx. 250g gram flour, Tsp salt, Approx. 75ml water and Oil to deep fry.
For the raita: 200g spicy mango chutney, 200g vegan yoghurt, Handful chopped mint and coriander and Half finely diced cucumber.
To garnish: sesame and nigella seeds.
