Simon Rimmer sticky ginger cake with figs and ice cream recipe on Sunday Brunch

Simon Rimmer served up a delicious sticky ginger cake with figs and ice cream on Sunday Brunch.

The ingredients are: 200g butter, 85g soft light brown sugar, 185g syrup, 50g treacle, 40ml maple, 250g self raising flour, 2 tsp ground ginger, Tsp ground cinnamon, Tsp mixed spice, 100g chopped, toasted almonds, 2 eggs, 30ml milk and 50g chopped stem ginger in syrup.
