Raymond Blanc Moules Three-Ways (Mussels with Lemongrass and Coconut, Moules Mariniere and Moules Provencal) recipe

Raymond Blanc served up Moules Three-Ways (Mussels with Lemongrass, Lime and Coconut, Moules Mariniere and Moules Provencal) on this week’s episode of Simply Raymond Blanc.

The ingredients for the mussels with Lemongrass, Lime and Coconut are: 1 banana shallot or ½ onion, 1 lemongrass, 2cm root ginger, 2 or 3 red chillies, to your taste, 3 tbsp refined olive oil, 1.8kg fresh mussels, 150ml dry white wine, 200ml coconut milk, ½ bunch coriander, roughly chopped and 4 pinches sea salt.
