Simon Rimmer Chewy Choc Cookies with mascarpone recipe on Sunday Brunch

Simon Rimmer served up delicious chewy choc cookies with mascarpone on Sunday Brunch.

The ingredients are: 95g granulated sugar, 1 tsp vanilla, 50g butter, pinch of sea salt, 1 egg white, 65g flour, ¼ tsp bicarb, 25g cocoa powder and 100g milk chocolate finely chopped.

For the filling: 300g mascarpone, 75ml of double cream, 1 tbsp 100s and 1000s, 50g choc chips and a tsp of vanilla.
