Simon Rimmer served up tasty huevos rancheros (spicy eggs with avocado) on Sunday Brunch.
The ingredients are: 3 eggs and 4 soft corn tortillas.
For the salsa: 1 finely diced red onion, 2 finely chopped birds eye chillies, 1 finely diced red and 1 green pepper, 30g sweetcorn (from a tin drained), oil and butter to fry, 8 chopped toms, include seeds and Coriander.
For the topping: 1 crushed avocado, Juice n zest 1 lime and 30g sour cream.
To garnish: sunflower seeds, coriander and lime wedges.
