The Bikers bras de gitan ( fancy roly-poly ) recipe

The Bikers served up a delicious bras de gitan ( fancy roly-poly Gypsy’s arm cake or Swiss roll ) on Hairy Bikers’ Mediterranean Adventure.

The ingredients for the creme patissiere: 300ml milk, 1 vanilla pod, 2 free-range egg yolks, 65g caster sugar, 40g cornflour, 1 tbsp orange liqueur (such as Grand Marnier), or peach eau de vie or kirsch and few drops almond extract.

For the almond Swiss roll: 50g plain flour, 1 tsp baking powder, 50g ground almonds, pinch salt, 4 large free-range eggs, 75g caster sugar, few drops almond extract, 1 tbsp orange liqueur, such as Grand Marnier or other eau de vie and 2 tbsp caster sugar, for dusting.

To serve: 4 tbsp cherry or apricot jam, 2 tbsp icing sugar and 3 tbsp flaked almonds, lightly toasted.
