Levi Roots Caribbean Christmas pudding recipe on Lorraine

Levi Roots served up a delicious Caribbean Christmas pudding on today’s episode of Lorraine.

The ingredients are: 125g mixed dried tropical fruit, 100g mixed currants and raisins, 125g dried figs, 125g dried apples, 50g dried sour cherries, 35g chopped candied orange peel, 1½ tsp ground cinnamon, 1½ tsp ground ginger, 1½ tsp freshly grated nutmeg, ½ tsp ground allspice, Grated rind and juice of 1 lemon, Grated rind and juice 1 orange, 300ml white rum, plus extra for flaming (optional), 125g butter, softened, plus extra for greasing, 150g soft light brown sugar, 2 large eggs, lightly beaten, 125g plain flour, sifted, ½ tsp baking powder, Pinch of salt, 150g fresh white breadcrumbs, 50g mixed nuts, roughly chopped, 1 tsp vanilla extract and 3 tbsp apricot jam warmed with 1 tbsp brandy (optional).
