Simon Rimmer butternut squash with dates loaf on Eat the Week with Iceland

Simon Rimmer served up a butternut squash with dates loaf with pecan nuts on today’s episode of Eat the Week with Iceland.

The ingredients are: 225g butternut squash (roasted), 175g dates (chopped), 1 egg, 150g caster sugar, 150ml vegetable oil, 275g flour, 2 tsp baking powder, 1 tsp ground cinnamon and 150g pecans (chopped).

For the icing: 150g full fat cream cheese, 50ml double cream, 30g icing sugar and 1 vanilla pod (seeds scraped).
