Simon Rimmer buckwheat blueberry pancakes with basil syrup recipe on Eat the Week with Iceland

Simon Rimmer served up buckwheat blueberry pancakes with cottage cheese and basil syrup on Eat the Week with Iceland.

Tyhe ingredients are: 200g buckwheat flour, 50g caster sugar, 2g salt, 5g bicarbonate of soda, 50ml melted butter, 1 egg, 475ml buttermilk, 75g blueberries and 50g cottage cheese.

For the basil Vanilla Syrup: 150g caster sugar, 150g water, 1 vanilla pod (seeds removed), 1 bunch basil and Assorted fruits (blueberries, strawberries, raspberries)

To serve: 20g coconut flakes, lightly toasted and Greek yogurt and honey.
