Simon Rimmer granola fruit crumble recipe on Eat the Week with Iceland

Simon Rimmer served up granola fruit crumble dessert on today’s episode of Eat the Week with Iceland.

The ingredients for the granola are: 200g rolled oats, 50g chopped pecans, 20g pumpkin seeds, 50ml maple syrup, 30g honey, 50g coconut oil, 1 vanilla pod and 15g dried cherries.

For the fruit mix: 2 Bramley apples (peeled), 2 Cox’s apples (peeled), 125g caster sugar, 1 cinnamon stick, 100g butter, 2 bananas (sliced) and 250g frozen mixed red berries.

For the custard: 1 tub ready made fresh custard (tinned or carton are also fine), 150ml double cream and 1 vanilla pod (seeds scraped).
