John Whaite spiced shredded pork with bao buns and pickled cucumbers recipe on Steph’s Packed Lunch

John Whaite served up tasty spiced shredded pork with bao buns and pickled cucumbers on Steph’s Packed Lunch.

The ingredients for the shredded pork are: 1.5kg boneless pork shoulder, 1 onion, peeled and chopped and 1 litre chicken stock.

For the BBQ Sauce: 40g unsalted butter, 1 small onion, peeled and finely chopped, 2 garlic cloves, peeled and minced, 3tbsp dark brown sugar, 2tbsp cider vinegar, 3tbsp gochujang paste, 100g tomato ketchup, 50ml apple juice, 1tbsp light soy sauce and 1tbsp Worcestershire sauce.

To serve: 18 bao buns (or use small tortilla wraps to make tacos), ½ cucumber, very finely diced, 2tbsp cider vinegar, 1tbsp caster sugar and 30g peanuts, chopped.
