Simon Rimmer serves up a delicious coconut custard tart on Sunday Brunch.

The ingredients for the pastry: 300g flour, 125g butter, 30g sugar, 1 egg and A little milk to bind.

For the filling: 10 egg yolks, 5g vanilla, 15g custard powder, 400g tinned coconut milk, 75g desiccated coconut, 250ml cream, 120g sugar and icing sugar to glaze.
