Simon Rimmer served up delicious vanilla custard with ginger granita and apple on Sunday Brunch.
The ingredients are: 3 granny smith apples, 125g sugar, 50mm piece ginger, grated, Juice and zest half a lemon, 600ml water, 700ml cream, 1 Teaspoon pure vanilla extract, 110g sugar and 6 egg yolks.
