Ainsley Harriott served up tasty steak frites with bearnaise sauce on Ainsley’s Fantastic Flavours.
The ingredients are: 500g large russet potatoes, washed, 3 tbsp light olive oil, plus extra for drizzling, 1 sprig of thyme, leaves picked, chopped, 2 x 200g sirloin steaks, 2 cloves of garlic, peeled, bashed, 1 tbsp butter, lightly dressed watercress, to serve, sea salt & freshly ground black pepper.
For the Béarnaise Sauce: 2 sprigs of tarragon, leaves and stalks separated, finely chopped, 2 tbsp white wine vinegar, 2 tbsp dry white wine, 1 small shallot, peeled and finely sliced, ¼ tsp black peppercorns, 120g unsalted butter and 3 large egg yolks.
