Freddy Forster jerk chicken with chilli mango salad recipe on Steph’s Packed Lunch

Freddy Forster served up tasty jerk chicken skewers with chilli mango salad on Steph’s Packed Lunch.

The ingredients are: 1kg chicken thighs, skinless, boneless and cut into medium dice, 25ml vegetable oil, ½ scotch bonnet chilli, deseeded and finely chopped, ½ tsp of each: allspice, dried thyme, cayenne pepper, light brown sugar, ¼ tsp cinnamon, Pinch of nutmeg and ground ginger and 2 cloves garlic, peeled and made into a paste.

For the mango and chilli salsa: 4tbsp ripe mango, peeled and chopped, 1tbsp red onion, peeled and finely chopped, 1tsp green chilli, deseeded and sliced, 2tbsp coriander, roughly chopped, 2tbsp plum tomatoes, with seeds and skin, chopped, 1 lemon, juiced, 50ml vegetable oil and Drizzle of soy sauce.

For the tzatziki dip: 4 tbsp Greek yogurt, 1 tbsp mint, chopped, 2 tbsp cucumber, finely chopped and ½ lemon, juiced.
