Simon Rimmer pulled mushroom burger with BBQ sauce and fennel coleslaw recipe on Steph’s Packed Lunch

Simon Rimmer served up tasty pulled mushroom burgers with BBQ sauce and fennel coleslaw on Steph’s Packed Lunch.

For ingredients for the BBQ sauce are: 300g tomato ketchup, 4tbs red wine vinegar, 75g dark soft brown sugar, 3tbs honey, 2tsp tamarind sauce, 1tsp English mustard, 1tsp smoked paprika and 2tsp red miso.

For the mushrooms: 400g oyster mushrooms, shredded, 80g plain flour, 1tbsp salt, 1tbsp smoked paprika and 1tsp cayenne.

For the slaw: 200g fennel, finely shredded, 2 red or green apples, finely match sticked, 1tbsp dill, chopped, ½ onion, peeled and finely sliced, 70g mayonnaise, 30g salad cream, 1tbsp yellow burger mustard and 2tsp smoked paprika.

To assemble: 4 brioche buns, 75g gherkins, sliced and 2 beef tomatoes, sliced.
