Shivi Ramoutar chilli con sausages recipe on Steph’s Packed Lunch

Shivi Ramoutar served up tasty chilli con sausages with jacket potatoes on Steph’s Packed Lunch.

The ingredients are: 2tbsp olive oil or vegetable oil, 4 spring onions, finely snipped , 3 garlic cloves, peeled and crushed , 1 large carrot, peeled and grated , 2 jarred red peppers, torn into small shreds, 1tbsp ground cumin , 1tbsp paprika, smoked or sweet, 1tbsp ground coriander , 1heaped tsp chilli powder , 8 sausages, squeezed out of their cases , 400g tin of chopped tomatoes , 400g tin of kidney beans, drained,
3 heaped tbsp ketchup and 1tbsp coriander, whole leaves.

To serve: White rice or jacket potato.
