Simon Rimmer strawberry cheesecake tart recipe on Sunday Brunch

Simon Rimmer served up a delicious strawberry cheesecake tart with fresh strawberries on Sunday Brunch.

The ingredients for the crust are: 300g crushed digestives and 140g melted butter.

For the filling: 400g cream cheese, 200ml cream, Juice and zest 1 lemon, 125g sugar and 1 teaspoon vanilla.

For the topping: 700g sliced strawberries and 200g strawberry jam, let down with 50ml hot water.
