Levi Roots Puerto Rican chicken with peppers, chilli and basmati rice recipe on James Martin’s Saturday Morning

Levi Roots served up tasty Puerto Rican chicken with peppers, chilli and basmati rice on James Martin’s Saturday Morning.

The ingredients are: 175g basmati rice, 3 tbsp sunflower or groundnut oil, 8 chicken pieces (a mixture of thighs and drumsticks), 2 tbsp all-purpose seasoning, salt and pepper, 1 onion, roughly chopped, 1 red pepper, deseeded and thinly sliced, 1 green pepper, deseeded and thinly sliced, 2 garlic cloves, finely chopped, 6 allspice berries, crushed, 1½ tsp turmeric, 2cm (¾/in) piece of root ginger, finely chopped, 1 hot red chilli (ideally Scotch Bonnet), sliced into thin rings (seeds left in), 600 ml (1 pint) chicken stock, 3 sprigs of thyme, 2 bay leaves, 100g pitted green olives, ideally stuffed with pimento and Lime wedges, to serve.
