Simon Rimmer sweet and sour crispy pork with spring onions and cherry tomatoes recipe on Sunday Brunch

Simon Rimmer served up tasty sweet and sour crispy pork with spring onions and cherry tomatoes on Sunday Brunch.

The ingredients are: 4 x 150g pork chop loins, fat removed, flattened with a rolling pin, Seasoned flour, 3 beaten eggs, 250g brioche breadcrumbs, 1 tsp chilli flakes, 1 tbsp sesame seeds and Oil to fry.

For the sauce: 10 sliced spring onion, 50mm piece ginger, cut into matchsticks, 1 clove crushed garlic, 1 red chilli, chopped, 600g cherry tomatoes, 200ml tomato ketchup, 15ml fish sauce, 300ml chicken stock and 1 tbsp sugar.

To serve: rice, spring onion, sesame seeds and coriander to garnish.
