Simon Rimmer served up a tasty Crispy Chicken With Cucumber and Jalapeno Salad on Sunday Brunch.
The ingredients are: 3 chicken breasts cut into 3 long pieces, 200ml buttermilk, 200g flour, 1 Tbs garlic powder, 1 Tbs turmeric, 1 Tbs dried oregano, 1 Tbs smoked paprika, 2 tsp cayenne, Tbs salt and Oil to deep fry.
For the salad: 1 cucumber, chopped, About 20 sliced jalapenos, from a jar, 40g edamame beans, 1 Tbs chopped dill, Zest n juice 1 lime, 50ml x v olive oil and 1 Tbs honey.
Serve with Greek yogurt and honey.
