Simon Rimmer served up a tasty cheese, leek and fish traybake on Steph’s Packed Lunch.
The ingredients are: 2tbsp olive oil, 2 leeks, finely sliced, 1 onion, peeled and sliced, 400g salmon fillets, skinned, 400g smoked cod or haddock fillets, skinned, 150g prawns, 50g spinach, finely sliced, 1tbsp dill, chopped and 50g frozen peas.
For the sauce: 30g unsalted butter, 30g plain flour, 1tsp garlic powder, 500ml whole milk, 250ml single cream and 50g Dijon mustard.
For the topping: 100g mozzarella, grated, 50g parmesan, finely grated, 100g extra mature cheddar, grated and 75g brioche crumbs.
To serve: Buttered new potatoes.
