Bikers Suffolk pork chops with cider and caramelised apples on Best of British foods

Si and Dave visits Suffolk on Best of British foods to see what the locals like to eat in the county. They discovered that pork is by far the most popular type of meat in the county and as a result they decided to cook one of their own pork dishes.

They serve up pork chops with cider and caramelised apples with all the ingredients, including the pork purchased in the county.

For their dish they used: 4 x 200g pork chops, 4 tsp sea salt flakes, 2 tbsp olive oil, 2 onions, 150g smoked bacon, 1 bouquet garni (celery, parsley, bay leaves and thyme), 300g button mushrooms, 300g shallots, peeled, cooked for ten minutes, then drained and refreshed in cold water, 4 Cox’s apples, peeled, cores removed, 4 tbsp muscovado sugar, 500ml Suffolk cider, 4 tsp Suffolk mustard, 400ml double cream, cooked carrots, and mashed potatoes, to serve.
