Raymond Blanc served up Maman Blanc’s vegetable soup three ways on Simply Raymond Blanc. These include a pistou soup and a blended soup.
The ingredients are: 1 small white onion, 1 medium potato, 1 tbsp unsalted butter, 1 garlic clove, ¼ or small turnip, 1 large carrot, ½ celery stick, 1 medium courgette, ½ medium leek, 1 small tomato, Sea salt and freshly ground white pepper, 1.2 litre boiling water and A large handful of fresh chervil, roughly chopped.
Additional ingredients for the pistou soup: 1 small bunch Basil leaves and stalks, 50ml water, 50ml extra virgin olive oil, 1 small clove garlic and good grating of parmesan.
To finish the soup (optional): 1 tbs creme fraiche.
