Simon Rimmer Harissa Salmon Tray Bake recipe on Sunday Brunch

Simon Rimmer served up a tasty harissa salmon tray bake with butternut squash, chick peas and feta cheese on Sunday Brunch.

The ingredients are: 1 sliced onion, 100ml olive oil, 1 butternut squash, unpeeled and sliced in to wedges, 100g of harissa, 200g of honey, zest and juice of 1 lemon, 12 chopped sun dried tomatoes, a tin of washed and drained chickpeas and 150g of crumbled feta cheese.

To Serve: chopped parsley and rye bread.
