Simon Rimmer apple strudel with rum and brioche recipe on Sunday Brunch

Simon Rimmer served up a delicious apple strudel with rum, brioche and custard on Sunday Brunch.

The ingredients are: 2 sheets of filo pastry, 200ml melted butter and 75g sugar.

For the filling: 6 peeled apples (3 granny smith, 3 braeburn or similar), 100g brown sugar, 60g sultanas, 40ml rum, 120g brioche breadcrumbs, the juice and zest of half a lemon, 1 tbsp flour, 1 tsp cinnamon and 1 tsp vanilla.

To serve: vanilla ice cream or custard.
