Simon Rimmer served up a tasty baked boozy coffee cheesecake with soft whipped cream on Sunday Brunch.
The ingredients are: 225g of chocolate digestive biscuits and 75g melted butter.
For the topping: 750g of cream cheese, 350g sour cream, 5 eggs, 2 tbsp instant espresso coffee powder, 50ml tia maria or a coffee liqueur and 150g soft dark brown sugar.
For the sauce: 1 tbsp coffee powder, 100ml tia maria, 50g brown sugar and 50ml of water.
