Rick Stein ( French bourriols) buckwheat pancakes with mushrooms and egg recipe on Rick Stein’s Secret France

Rick Stein served up a tasty French Cantal bourriols – vegetarian buckwheat pancakes with mushrooms and egg on Rick Stein’s Secret France.

The ingredients for the batter are: 90g buckwheat flour, 90g plain flour, ½ tsp salt, 6g fast-action dried yeast, 1 large free-range egg, 325ml full-fat milk, 225ml warm water and rapeseed oil, for frying.

For the filling: 4 large flat mushrooms, wiped and sliced, drizzle olive oil, 2–3 tsp butter, 4 free-range eggs, 150–200g Cantal, Comté or Gruyère cheese, finely grated, freshly ground black pepper, fresh flatleaf parsley sprigs, roughly chopped, to garnish and fresh green salad or wilted spinach, to serve.
