James Martin Frangipane Tart with Strawberry Jam on James Martin: Home Comforts Cheap and Cheerful Meals

Jam maker Jennifer Williams from Naked Jam visits James Martin in his Home Comforts kitchen to watch the master chef make a delicious frangipane tart using her strawberry jam.

Jennifer says: “ I like to use seasonal local fruit and more often than not it’s foraged. ( I have been known to fall out of trees!) I have developed some new taste combinations but use traditional cooking methods so its take on cooking jam. I enjoy supplying individual boutique hotels and personal orders alongside special events such as Royal Ascot, Chelsea Flower Show.”

James says: “A Bakewell tart by any other name. Use the jam of your choice – raspberry is the classic option, though cherry also works well.”

James decorates his tart with almonds and serves it with homemade custard using 250ml of milk and 250ml of cream and a vanilla pod. The mixture his heated while he whisks 4 egg yolks with 150g caster sugar in a bowl. He then pours the heated mixture into the bowl and whisks before pouring it all back into the pan on the heat.
