Simon Rimmer Granola with Peanut Butter Smash recipe on Sunday Brunch

Simon Rimmer served up delicious granola with a peanut butter smash on Sunday Brunch.

The ingredients are: 200g rolled oats – roasted, 50g chopped hazelnuts – roasted, 25g chopped pecans – roasted, 25g golden raisins, 50g desiccated coconut, 15g dried cherries, 125ml maple syrup, 50ml melted margarine, 150g crunchy peanut butter, 150ml vegan coconut yoghurt, 100g ripe strawberries, 50g blueberries and 2 chopped ripe nectarines.

Maple and fresh mint to garnish.
