Simon Rimmer pear with ginger and maple pudding recipe on Sunday Brunch

Simon Rimmer served up a delicious pear with ginger and maple pudding on Sunday Brunch.

The ingredients are: 1kg peeled pears, cut into chunks, 30g butter, 100g maple and 50g stem ginger in syrup, chopped.

For the topping: 150g plain flour, 1.5 heaped tsp baking powder, 150g butter, 130g golden caster sugar, 3 eggs, tsp ground ginger and pinch ground cinnamon.

To serve: good quality vanilla ice cream.
