Simon Rimmer Sri Lankan Mussells recipe on Sunday Brunch

Simon Rimmer served up tasty Sri Lankan Mussells on Sunday Brunch.

The ingredients are: 1 finely diced onion, 1 lime leaf, 1 cinnamon sticks, 3 cloves, 25g chilli flakes (can reduce if it’s too spicy), 8 curry leaves, 2 cloves garlic, 125g shrimp paste, 50g sugar, 5g sea salt, 50g grated ginger, 75ml coconut oil, 1 kg mussels, washed and de-bearded, A big handful of roughly chopped spinach, 100g samphire, 1 very finely sliced red pepper and Garnish with lime, mint, and coriander.
