Simon Rimmer served up a delicious tropical loaf with dried fruit and yoghurt on Sunday Brunch.
The ingredients are: 125ml oil, 150g dried mixed fruit – mango, papaya, pineapple. Finely chopped, zest and juice 1 lime, 125g Greek yoghurt, 175g caster sugar, 2 eggs, 1 tsp vanilla bean paste, 175g flour and 1 1/2tsp baking powder.
For the topping: 150g butter, 50g caster sugar, 1 tsp vanilla bean paste, 300g full fat cream cheese and zest 1 lime.
