Ainsley’s Caribbean vegetable soup with flatbreads recipe on This Morning

Ainsley Harriott served up a tasty and spicy Caribbean pepper pot vegetable soup with flatbreads on This Morning.

The ingredients are: 2 tbsp coconut oil, 1 large white onion, finely chopped, 1 scotch bonnet chilli, finely chopped, 1 garlic clove, crushed, 2 tsp curry powder, 1 pinch of saffron, 1 red pepper, large dice, 1 yellow pepper, large dice, 1 butternut squash or small pumpkin, cut into approx 1cm dice, 2 large tomatoes, roughly chopped, 750ml vegetable stock, 1 x 400ml tin coconut milk, 100g spinach, washed and drained, Salt and freshly ground black pepper, 1 small handful coriander, chopped.
