Simon Rimmer served up a tasty watermelon and strawberry salad on Sunday Brunch.
The ingredients are: 1 cucumber, peeled, deseeded and cut into half moons, Half watermelon, cut into 30mm cubes, 200g strawberries, 200g feta, 50g green olives, Handful rocket, 3 finely chopped spring onions, Handful chopped mint, 50g pistachios, 2 plum tomatoes, 50ml sherry vinegar, 175ml olive oil and 30ml honey.
Serve with toasted slices of baguette.
