Jun’s pan fried sea bream with mussels and fennel salad recipe on Yes Chef

Jun Tanaka served up pan fried sea bream with mussels and fennel salad on today’s episode of Yes Chef.

The ingredients are: 500g mussels, scrubbed and debearded, 4 tbsp olive oil, 1 shallot, finely chopped, 1 garlic clove, finely chopped, 2 sprigs thyme, 25ml white wine, 100ml fish stock, 1 leek, finely chopped, ¼ celeriac, roughly chopped, 1 carrot, roughly chopped, 1 tbsp crème fraîche, 1 small bunch chives, finely chopped, 2 x sea bream fillets (skin on), 1 fennel bulb, quartered, 2 tbsp extra virgin olive oil, 1 lemon, juice only, salt and freshly ground black pepper.
