The Hairy Bikers fig compote with pork and chicken terrine recipe

Simon and Dave served up a tasty figs compote with a pork and chicken terrine on The Hairy Bikers‘ Comfort Food.

The ingredients for the chicken layer: 400g chicken breasts, 100ml white wine, 1 lemon, zest only, sprig thyme, leaves only, 1 tbsp olive oil and 4 tbsp finely chopped parsley.

For the pork layers: salt and freshly ground black pepper, 300g trimmed pork shoulder, 300g rindless pork belly, 1 lemon, zest only, 1 tbsp thyme leaves, finely chopped, ¼ tsp ground ginger, 75g dried apricots, finely chopped, 25g pistachio kernels, halved.

To assemble: 400g rindless streaky bacon rashers.
