John Whaite served up tasty salsa sausages for a late summer’s day on today’s episode of Lorraine.
The ingredients for the traybake are: 1 small butternut squash, peeled and sliced into fat wedges, 1 yellow pepper, cut into 5cm chunks, 4 fat red chillies, sliced in half lengthways, 198g can sweetcorn, drained, 1 red onion, skin removed and sliced into 10 wedges, 4 garlic cloves, peeled but left whole, Olive oil, 1 tsp paprika, 1 lime, 8 good-quality sausages of your choice, Sea salt flakes and Coarse black pepper.
For the barbecue sauce: Olive oil, 1 red onion, finely chopped, 1 garlic clove, minced, 2 tbsp brown sugar, 2 tbsp red wine vinegar, 1 tsp Worcestershire sauce, 4 tbsp tomato ketchup and 4 tomatoes, chopped.
To garnish: Small handful fresh coriander, roughly chopped.
