The Great British Bake Off 2013: Beca’s Tiered Macaroon and Sugar Dough Biscuit

Beca’s Tiered Macaroon and Sugar Dough Biscuit, which was a cake stand made out of biscuit with macaroons as the cakes, earned her high praise this week.

Paul Hollywood described the macaroons as “exceptional”. Mary was delighted with the look, declaring it to be ‘fun’ and ‘fit for a little girl’s party’.

However, her biscuits disappointed the judges as they didn’t taste like biscuits and did not snap.

Baking Tips

To make good biscuits, always measure the baking soda, baking powder, salt, and especially flour accurately. Before measuring the flour, stir it with a spoon if it is compacted. Then lightly spoon flour into your measuring cup until it is heaped above the rim. Do NOT shake or tap the cup to settle the flour, or you will have more flour than you need. Slide a spatula or knife across the top to level.
