Aubergine and walnut caviar on on blinis recipe on The Hairy Bikers’ Northern Exposure

Si and Dave served up aubergine and walnut caviar on blinis while sailing on a canal in Saint Petersburg, Russia on The Hairy Bikers’ Northern Exposure.

The ingredients for the aubergine and walnut caviar are: 2 large aubergines, 4 garlic cloves, 2 thinly sliced and 2 crushed, 1 lemon, juice only, 2 tbsp olive oil, 2 tbsp finely chopped parsley, 2 tbsp finely chopped mint and 50g walnuts, finely chopped.

For the blinis: 55g buckwheat flour, 175g plain flour, 1 tsp salt, 7g dried yeast (one sachet), 200g crème fraiche, 225ml whole milk, 2 large free-range eggs, whites only and knob of butter.
