Marcus Bean three bean chilli with tomato salsa, corn tortillas and sour cream recipe

Marcus Bean served up a tasty three bean chilli with tomato salsa, corn tortillas and sour cream on this morning.

The ingredients are: Oil (rapeseed or olive), 1 onion, finely diced, 3-4 garlic cloves, finely diced , 1 red pepper, diced , 1 tbsp smoked paprika, 2 tsp ground cumin , 1 tsp dark brown sugar, 2 small vegetable stock cubes, crumbled , 600g tinned chopped tomatoes, or passata, 1 x 400g tin of red kidney bean , 1 x 400g tin of borlotti beans, 1 x 400g cannellini beans, 1 tsp Chipotle chilli paste, 1 tbsp tomato puree , Salt and black pepper, to season and 2 flour/corn tortillas.

For the sour cream: 400ml double cream , Juice of ½ a lemon and Salt and pepper.

For the tomato and coriander salsa: 2 medium vine tomatoes, finely chopped , 1 medium red onion, finely diced, Small bunch of fresh coriander, chopped , Juice of ½ a fresh lime , 2 spring onions, finely sliced, ½ tsp apple cider vinegar, Salt and pepper, Pinch of caster sugar.

To garnish: Grated mature cheddar cheese (optional, to garnish) and 1 fresh chilli, finely sliced (optional, to garnish).
