Rosemary Shrager seared salmon with Thai inspired couscous recipe on Steph’s Packed Lunch

Rosemary Shrager served up tasty seared salmon with Thai inspired couscous on Steph’s Packed Lunch.

The ingredients for the couscous are: 200g couscous, 250ml boiling water, 1tbsp vegetable oil, 1 banana shallot, peeled and finely chopped, 2 garlic cloves, peeled and thinly chopped, 1 red pepper, deseeded and diced, 2tsp ground cumin, 2tsp ground coriander, 1 lemon, zested and juice, 1 fresh red chilli, deseeded and chopped, 2cm piece ginger, peeled and finely chopped, ½ tsp turmeric, 1tbsp fish sauce, 225g spinach leaves, stalks removed leaves torn and Large bunch of fresh coriander, stalks trimmed and leaves chopped.

For the salmon: 2tbsp vegetable oil, 4 salmon fillets.

To serve: 1 lime, juiced and Crème fraiche.
