Ruby Bhogal vanilla custard slices recipe on Steph’s Packed Lunch

Ruby Bhogal (from the great British bake Off) served up delicious vanilla custard slices on Steph’s Packed Lunch.

The ingredients for the pastry are: 500g ready-made puff pastry, block.

For the custard: 400ml full fat milk, 100ml double cream, 2tsp vanilla bean paste, 6 large free-range egg yolks, 100g caster sugar, 20g plain flour, sifted, 20g cornflour, sifted and 10g unsalted butter.

For the icing: 250g icing sugar, sifted, Approx 80ml water, ½ tsp almond extract and 50g dark chocolate, melted and cooled.
