Simon Rimmer Mackerel with Pickled Carrots Recipe on Sunday Brunch

Simon Rimmer served up a tasty mackerel with pickled carrots dish served with mayo, rocket and bread on today’s episode of Sunday Brunch.

The ingredients are: 4 x 100g mackerel fillets and Oil to fry.

For the Pickle: 3 sliced shallots, 2 peeled, thinly sliced carrots, 100ml olive oil, Juice 1 large orange, 1 tsp chilli flakes, 4 saffron strands, 1 tbsp crushed coriander seeds, 1 tbsp capers, 50ml white wine, 50ml white wine vinegar and bunch chopped tarragon.
