Rick Stein served up a delicious German apple cake known as Apfelkuchen on Rick Stein’s Long Weekends.
Rick says: “Apfelkuchen are revered in Germany, and this moist cake with a crunchy cinnamon topping will show you why.”
The ingredients are: 2 dessert apples, peeled, cored and sliced into thin wedges, 1 tbsp lemon juice, 125g butter, softened, plus extra for greasing, 140g golden caster sugar, 3 free-range eggs, at room temperature, beaten, 225g plain flour, 2 level tsp baking powder, ½ tsp salt and 5 tbsp full-fat milk.
For the topping: 1½ tbsp demerara sugar and ½ tsp ground cinnamon.
